Position: selection of the best Pinot Blanc vines
Soil: gneiss, granite and slate
Name: the name “phileo” derives from Filomena, the woman who significantly contributed to the evolution of the Falkenstein farm, and is seen as a model for our future generations. This wine is a tribute to the mother of Franz, the current owner.
Vinification: fermentation in barrique barrels, storage in French barrique barrels (12 months) and steel casks (5 months), followed by bottle sedimentation (31 months).
Type of fermentation: spontaneous fermentation
Taste: delicate aromas of apple, vanilla and citrus fruits; malic acid biological degradation; creamy and persistent finish; acidity and mineral notes; potential for long ageing
